Seed & cacao energy bites

Ingredients

  • 200g Medjool dates, pitted (approx. 10 dates)
  • 100g (¾ cup) raw almonds
  • 3 tbsp sunflower seeds
  • 3 tbsp pepitas
  • 2 tbsp sesame seeds
  • 3 tbsp raw cacao powder
  • 2 tbsp chia seeds
  • 3 tbsp desiccated coconut
  • 2 tbsp almond or cashew butter
  • 1 tsp pure vanilla extract
  • Pinch of sea salt
  • Extra cacao or coconut to roll (optional)

Method

  1. Place dates in a small bowl and cover with boiling water for 5 minutes to soften. Drain well.
  2. Add almonds to a food processor and blitz until roughly chopped — you want some texture, not a powder.
  3. Add drained dates, nut butter, cacao powder, vanilla, and salt. Process until the mixture starts to clump together.
  4. Add all seeds and coconut. Pulse a few more times — you want the seeds distributed but not pulverised.
  5. Roll tablespoon-sized portions into balls. Roll in extra cacao powder or desiccated coconut if you like. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.

doTERRA oil tip: Add 1–2 drops of Wild Orange oil to the mixture for a chocolate-orange flavour that is absolutely next level. Peppermint oil is another brilliant choice — just 1 small drop for a mint-choc bite.

Marcia's tip: Double the batch and freeze half. You'll always have a proper afternoon snack on hand — which means less reaching for the biscuit tin.
